I have tried preparing idli before (not from your recipe.) I think boiled/parboiled rice is good for making idli. Am I right? See a google post on this info@ Also, some Indian Stores in USA sell a special brand of idli-flour/rice.
 
 
Btw, in the past my idlis have come out somewhat rubbery (when I tried making them I did not follow directions properly... I think.)
 
I will try your recipe. I think my problem is lack of proper idli making 'steam-cooker' in USA.
I have tried using cup-cake bake-plate after drilling holes in it by placing it over a short container (vessel) filled with water that was placed inside a pressure cooker!

Thanks for Idli recipe. Only question is what kind of rice will give good result for a fluffy soft idli !! There are so many differet rice in the market. Any particular brand and kind of rice any body can recommend?? e.g. basmati or longrain or thick rice and what brand? Thanks Dave
